Wild Rice and Bean Salad

 

2 cups cooked Inari Organic Wild Rice

2 cups cooked Inari Organic Red

Kidney Beans

2 cups cooked Inari Organic Chick Peas

1 can (127 g) chopped green chilis

1/3 cup chopped red onion

½ cup chopped celery (1 medium stalk)

¼ cup chopped fresh cilantro

 

Dressing

¼ cup extra virgin olive oil

¼ cup vinegar

1 tsp dry mustard

½ tsp salt

½ tsp black pepper

2 cloves minced garlic

 

Directions:

In a large bowl, combine all salad ingredients; mix well. In a small bowl, combine all dressing ingredients; mix well. Pour dressing over salad; toss to coat. Serve immediately, or cover and refrigerate until serving time.
