Sprouted Chickpea Salad

 

2 Cups dried Inari Sprouted Chickpeas

1 English cucumber

1 Bunch Parsley

1 Bunch Green onions

1 Red Pepper

 

PREPARATION:

Cook Chickpeas as directed on package, drain well set aside to cool. Seed cucumber and chop along with parsley green onions and red pepper. Set aside in salad bowl.

 

DRESSING:

1/2 cup Olive Oil

Juice of 1 Lemon

1/2 Tsp Cumin

1/4 cup Balsamic vinegar

2 Cloves garlic

Salt to taste

 

Combine all ingredients and mix with salad.
