Quinoa Harvest Salad

 

1 bunch green onions, chopped

2 cups water

3 tomatoes, diced or 1 cup cherry tomatoes halved

1 cup Inari quinoa

1 cucumber, diced

1 pinch sea salt

1 clove minced garlic

¼ cup olive oil fresh ground pepper

½ teaspoon sea salt

¼ cup fresh parsley, chopped

¼ cup lemon juice

 

PREPARATION:

In a saucepan bring the water to boil; add quinoa and salt. Reduce heat to low, cover and simmer for 15 minutes. Allow to cool and then fluff with a fork. In a large bowl, combine olive oil, sea salt, onions, lemon juice, tomatoes, cucumber, garlic, pepper and parsley. Stir into quinoa.

 

Makes approximately 4 servings.
