Four Fusion Vegetarian Pilaf


¾ Cup Inari Organic Arborio Rice

½ Cup Inari Organic Roasted Buckwheat Groats

½ Cup Inari Organic Amaranth

¼ Cup Inari Organic Quinoa

4 cups Vegetable stock

1 onion (medium, diced)

¼ parsley (fresh, chopped)

3 tbsp parmesan cheese or flaked nutritional rice



Heat 1½ tbsp butter and 1½ tbsp olive oil until melted. Dice onion, add to pot and sauté for 3 to 4 minutes or until soft. Add Arborio rice, buckwheat, amaranth & quinoa and stir for about 30 seconds. Add vegetable stock, bring to boil. Once boiling, reduce heat to low and cover with lid, let simmer stirring occasionally. Cook until liquid is absorbed or mix is creamy with a slight chewy texture, about 15 to 20 minutes. Remove from heat and let stand for 10 minutes. Stir in parsley, parmesan cheese (or flaked nutritional yeast). Enjoy!
