Fruited Fusion Pilaf

 

1-1/2 cup Inari Fusion 4 Pilaf International Mix (dry)

3 cups boiling water

1 medium minced onion

2 medium stalks celery

1 teaspoon salt

½ teaspoon dried dill

2 tablespoons olive oil

½ cup each dried currents and diced dried apricots

1 cup chopped toasted walnuts

Lemon wedges

 

PREPARATION:

In a wok or deep skillet sauté onion and celery in oil on medium heat for about 10 minutes, until onions are clear. Add the uncooked Inari Fusion 4 International Mix along with the salt and dill and continue to sauté for an additional 5 minutes, stirring frequently. Add the water and dried fruits. Cover, reduce heat to low and simmer for an additional 15 -20 minutes (until water is absorbed). Add parsley and walnuts just before serving. Garnish with lemon wedges for squeezing.
