Flax Banana Muffins

 

1 egg

1 cup (250 ml) of 1% milk

¼ cup (50 ml) vegetable oil

½ cup (125ml) evaporated cane sugar

3 bananas, mashed

1 tsp (5 ml) vanilla

1 cup (250 ml) flax flour

1 cup (250 ml) all purpose flour

1 cup (250 ml) whole wheat flour

1 tsp (5 ml) baking soda

1 tbsp (15 ml) baking powder

 

PREPARATION:

In one bowl, mix together the egg, milk, oil, sugar, bananas, and vanilla. In another bowl, mix together the flour, baking soda, and baking powder. Combine the wet and dry ingredients; mix until just blended. Scoop the batter into 12 nonstick or paper lined muffins cups; fill each cup full. Bake in a 200° C (400° F) oven for 20 to 25 minutes, or until firm to the touch.
