Gingerbread Cookies

INGREDIENTS:
6 eggs
1/3 cup butter or coconut oil, melted
¼ teaspoon salt
½ cup molasses
¾ cup sucanat or brown sugar
1 teaspoon ground ginger
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
¾ cup sifted coconut flour

PREPARATION:
Blend together eggs, butter, salt, molasses, sugar, and spices. Stir in coconut flour and mix thoroughly. Batter will thicken slightly as the flour absorbs moisture. Drop batter by spoonfuls onto greased cookie sheet. Bake at 400 degrees F (205 C) or 12-14 minutes. Makes 32 cookies.
